Mille-Feuille or Cremeschnit, a typical French dessert.
This extremely simple dessert, made from a crunchy pastry dough covered with two layers of vanilla cream, will win you over at first taste.
Ingredients:
1 packet foie gras dough
0,150 g sugar
0,080 g egg yolk
0,020 g starch
0,500 g hot milk
0,010 g hydrated gelatine
0,020 g vanilla sugar or 1 vanilla paste
0,200 g whipping cream
0,050 g butter
0,020 g icing sugar
Mix the egg yolks with the starch, sugar and seeds from the vanilla paste (vanilla sugar) then temper with the hot milk and simmer until the cream thickens. Take off the heat and add the gelatine and butter. Leave to cool.
Cut the pastry sheet into 3 equal parts (lengthwise) and then assemble: liver / cream / sheet / cream / sheet. Sprinkle the top with powdered sugar.
